SATURDAY
On Saturday morning I went on a hike with my Meetup group. Have you girls ever tried Meetup? I’ve made so many friends!
We walked the Bob Jones Trail in Avila Beach. On our way back, we stopped halfway on the trail to get lunch, which my friend Dominique had planned into the event. So fun!
I didn’t have breakfast Saturday morning simple because I’d forgotten.
Lunch – mango and avocado chicken wrap with a side of pasta salad
The pasta salad was an exciting surprise as I had no idea my wrap came with anything. The wrap was pretty good, and also filling so I ate about half and felt satisfied.
Dinner – spaghetti noodles with pesto, arugula, and tomatoes
The past two week I’ve done so much with friends during the weekdays and weekends, which has been a BLAST. Since I’ve had such a full schedule, I decided to stay in Saturday night and watch romantic comedies SOLO.
I made myself some popcorn and enjoyed this pistachio ice cream wrapped up in my blankets while watching Can’t Buy My Love and 13 Going on 30.
SUNDAY
Breakfast – yogurt with strawberries, gluten free granola, and flaxseed meal
Lunch – leftover spaghetti noodles with arugula, pesto, and tomatoes
Ah, we had SO much fun at the Gary Allan concert on Sunday. He was the lead singer at the Avila Beach Country Music Festival. We went to the concert with my friend Caitlin and her friend Gabby.
After the concert we went to Firestone Grill in downtown SLO where I ordered their Southwestern Salad and shared a few fries with everyone.
MONDAY
Breakfast – yogurt, flaxseed meal, and gluten free granola
Lunch – Urbane Cafe Club Sandwich with a side salad
In the late afternoon Marco and I walked to pick up his car (getting a dent fixed) and on our walk ordered a decaf mocha at Black Horse Coffee. I had such a craving for a yummy, warm, chocolatey mocha.
Dinner – linguine noodles topped with kale, quinoa, and chicken sausage
Normally when I make this dinner I don’t have it with pasta, but this week I wanted something more filling. Marco and I decided that we enjoy it MOST without the pasta and with just the kale, quinoa, and sausage + soy sauce.
TUESDAY
Breakfast – yogurt, strawberries, flaxseed meal, and gluten free granola + Twinnings English Breakfast Tea with coconut milk
Lunch – pasta with kale, quinoa, and chicken sausage
Petite-treat – split a Batch ice cream sandwich with Marco (chocolate chip cookie with vanilla ice cream)
Dinner – caprese panini with basil, tomato, mozzarella, and prosciutto + tomato soup
We loved this meal so much last week that we added it to our meal list and grocery plan again this week!
